1. Kiwi Watermelon Popsicles

Serves 8

Ingredients:

  • 3 cups Fresh Watermelon (Cubed) 450g

  • ¾ cup Coconut Yogurt (unsweetened)

  • 4-5 Kiwis (Cubed)

Directions:

  1. Cube the watermelon and blend it in a blender or a food processor.

  2. Transfer the watermelon pure to the molds and freeze for 3 hours.

  3. Add a thin layer of coconut yogurt over the watermelon popsicle and put back the mold in the freezer and let it freeze for an hour and a half.

  4. Peel and cut the kiwi in cubes and blend it in a blender or a food processor.

  5. Take the popsicles out of the freezer and add the last layer over the coconut yogurt layer and put the molds back in the freezer and let it freeze for at least one hour and a half or until completely frozen.


2. Frozen Kefir Bark

Ingredients:

Yogurt Bark

  • 2 cups of milk kefir

  • 2 Tbsp. of raw organic honey

  • 3 fresh strawberries

  • 10 blueberries

Toppings

  • 5 fresh strawberries, sliced

  • Handful of blueberries

  • 2 Tbsp. sliced almonds (optional)

Directions:

  1. Mix milk kefir and honey until well combined. Add strawberries and blueberries and stir.

  2. Line a baking tray with foil or parchment paper.

  3. Pour the milk kefir mixture on top and spread it depending on how thick or thin you would like your bark to be. 1/2″ thick is ideal.

  4. Sprinkle your choice of toppings on before freezing for 2–4 hours.

  5. Once frozen, break the bark into pieces with a sharp knife.


3. Banana “Nice” Cream

Ingredients:

  • 2–4 frozen green bananas

  • Optional add-ins: kefir, chia seeds, strawberries, chopped apple, cacao

Directions:

  1. Peel and slice green bananas. Freeze them until solid.

  2. Blend frozen banana slices in a food processor or high-powered blender until smooth.

  3. Optional: Add a splash of kefir or a tablespoon of chia seeds plus any other flavor add-ins while blending.

  4. Serve immediately for a soft-serve texture, or freeze for 30 minutes for a firmer consistency.


4. Watermelon Lime Popsicles

Ingredients:

  • 6 cups cubed watermelon

  • 2 tablespoons fresh lime juice

Directions:

  1. In a blender, place the watermelon and lime juice. Blend until completely smooth, then pour into popsicle molds, leaving ½ inch at the top for expansion.

  2. Cover and add popsicle sticks if necessary. Freeze until set, 4 hours or overnight.


5. Frozen Smoothie Bites

Ingredients:

  • 1 frozen banana

  • 4 chopped strawberries

  • 1-1.5 cups almond milk or kefir

  • 1 Tbsp hemp seeds

  • 1/4 cup rolled oats

  • 2 handfuls kale

Directions:

  1. Add all ingredients to a blender and blend till smooth

  2. Pour 1-2 glasses of smoothie then pour the leftovers in to a chocolate mold for fun shapes as thick or thin as you like (Put the mold on a plate to keep it from spilling in the freezer)

  3. Pop the bites in the freezer for 4 hours.

  4. Pop them out of the mold then store in an airtight container in the freezer for 3 months. Allow them to sit for 5 mins prior to serving.
