Detox Summer Salad with Brussels Sprouts, Beets, and Green Goddess Dressing

Loaded with fiber-rich Brussels sprouts, phytonutrient-rich beets, and digestive-supporting microgreens, this recipe is perfect for those hot days when you want to feel light and energized.

This anti-inflammatory powerhouse combines lean protein, healthy fats, and antioxidant-rich vegetables to support your body's natural detoxification processes while keeping you satisfied. The creamy avocado-based green goddess dressing adds healthy fats and makes every bite delicious!

Serves 4

Ingredients:

  • 10 oz Shaved Brussels sprouts

  • 2 cups micro green mix with broccoli sprouts

  • 1/2 bunch of fresh parsley, chopped

  • 1 cucumber, diced

  • 4 green onions, tender white and green parts, trimmed, chopped

  • 2 Tbsp raw hulled hemp seed

  • 1 Apple, matchstick slices

  • 4 steamed beets, matchstick slices

  • 1-2 carrots, shredded

  • 2 cups grilled chicken, chopped

    For the green goddess dressing:

  • 1 large or 2 mini avocados, peeled & pitted

  • 1 freshly squeezed lemon

  • 2 tbsp raw tahini

  • 1/2 tsp salt

  • 1 tsp miso

  • 4 garlic cloves

  • 3 tbsp water to thin out the dressing as needed


Directions:

  1. Mix all salad ingredients together in a large bowl.

  2. Add all dressing ingredients in a food processor, then process until smooth. Add water as needed to reach desired consistency (this is a thicker dressing).

  3. Toss salad in dressing and serve!
