Detox Summer Salad with Brussels Sprouts, Beets, and Green Goddess Dressing

Serves 4
Ingredients:
10 oz Shaved Brussels sprouts
2 cups micro green mix with broccoli sprouts
1/2 bunch of fresh parsley, chopped
1 cucumber, diced
4 green onions, tender white and green parts, trimmed, chopped
2 Tbsp raw hulled hemp seed
1 Apple, matchstick slices
4 steamed beets, matchstick slices
1-2 carrots, shredded
2 cups grilled chicken, chopped
For the green goddess dressing:
1 large or 2 mini avocados, peeled & pitted
1 freshly squeezed lemon
2 tbsp raw tahini
1/2 tsp salt
1 tsp miso
4 garlic cloves
3 tbsp water to thin out the dressing as needed
Directions:
Mix all salad ingredients together in a large bowl.
Add all dressing ingredients in a food processor, then process until smooth. Add water as needed to reach desired consistency (this is a thicker dressing).
Toss salad in dressing and serve!
