Easy Chicken Lettuce Lunch Wraps

These chicken romaine lettuce wraps are a fresh, low-carb alternative to tortillas—filled with chicken, hummus, pesto, and crisp veggies. Perfect for meal prep, healthy lunches, or a quick grab-and-go option.

Serves 1

Ingredients:

  • 6 romaine leaves, washed

  • 4 oz chopped chicken

  • 1 Tbsp hummus (made with olive oil, e.g. Ithaca x Graza Hummus)

  • 1 Tbsp pesto

  • 1 oz goat cheese *or* ½ small avocado

  • Sea salt + cracked pepper

  • Thinly sliced bell pepper strips *or* cucumber slices


Directions:

  1. Use crisp romaine leaves as your “tortilla,” laying out the leaves in a somewhat circular shape with the bottom of the leaves facing inward. Pro tip: cut off a tiny triangular piece from the base of each leaf for easy rolling.

  2. Layer in chicken, hummus, pesto, and avocado or goat cheese

  3. Add crunchy veggies for freshness, plus salt and pepper taste.

  4. Roll it up burrito-style, wrap in parchment, and enjoy!
