Serves 8

Ingredients:

  • 2 lbs grass-fed beef (try 1 lb. Force of Nature Ancestral Blend + 1 lb. local beef)

  • Salad greens (any mix you like)

  • Toppings: tomato, red onion, avocado, fermented pickles (like bubbies)

  • Simple vinaigrette (olive oil, lemon, dijon, salt, pepper)

  • Optional: grass-fed cheddar (like Organic Valley)

  • Optional: roasted sweet potatoes (toss in avocado oil; roast at 425 for 20-25 minutes)

  • Salt and pepper


Directions:

  1. Prep your salad, plus toppings and set aside.

  2. Season beef with salt and pepper; form 8 patties.

  3. Grill or cook in cast iron skillet for approximately 3-4 minutes per side.

  4. Add cheese after flipping, if using.

  5. Toss salad with vinaigrette just before serving.
