Crispy Smashed Parmesan Broccoli

Crispy, savory, and simple, this smashed broccoli is an easy way to make cruciferous vegetables a little more exciting. Boiling the broccoli first makes it tender enough to smash, while Parmesan and seasonings create golden, crispy edges in the oven.

Serves 4

ingredients:

  • 1 head broccoli, about 1 lb

  • 3 tbsp avocado oil

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • Salt and pepper, to taste

  • Grated Parmigiano-Reggiano, as desired


Directions:

  1. Boil the broccoli for 7–10 minutes, until just tender. Drain well and pat dry.

  2. Cut the broccoli into florets, keeping the stems.

  3. Combine the avocado oil, smoked paprika, garlic powder, oregano, salt, and pepper.

  4. Arrange the broccoli on a lined baking sheet and gently smash each piece flat.

  5. Brush the broccoli generously with the seasoned oil.

  6. Top each piece generously with grated Parmigiano-Reggiano.

  7. Bake at 350°F for 15 minutes, or until golden and crisp.

  8. Enjoy warm as a side dish, snack, or addition to your favorite meal.
