Crunchy Chicken Broccoli Salad

It’s perfect for meal prep during busy weeks when you want something nourishing that truly keeps you full. It holds up beautifully in the fridge and makes fresh, flavorful lunches all week long.
Ingredients:
2-3 cups cooked chicken
3 cups shredded broccoli
1 Cosmic Crisp or Honeycrisp apple, diced
⅓ cup roasted and salted sunflower seeds
½ cup shredded carrots
¼ cup fresh herbs (cilantro, parsley, and dill), chopped
¼–½ cup goat cheese, crumbled
Dressing:
¼ cup extra-virgin olive oil
2 tbsp balsamic vinegar
1 tbsp lemon juice
1 tsp Dijon mustard
1-2 tsp maple syrup
½ tsp kosher salt
¼ tsp black pepper
1 garlic clove, minced
Directions:
Whisk all vinaigrette ingredients together until smooth and emulsified.
Add cooked chicken to a bowl or stand mixer and mix on low speed until finely shredded.
In a large bowl, combine shredded chicken, broccoli, apple, sunflower seeds, carrots, fresh herbs, and goat cheese.
Pour vinaigrette over the salad and toss well to combine. Season with additional salt and pepper as needed.
