Green Grinch Soup
Meet the green soup even picky eaters get curious about. This velvety soup made with roasted broccoli, fresh spinach, lemon, feta, and herbs delivers big flavor while packing in nutrients that support digestion and immunity. Around here, we jokingly call it “Green Grinch Soup”—and somehow, that little rebrand gets way more enthusiastic taste tests.
Serves 4
Ingredients:
2 heads broccoli, cut into small florets
2 cups baby spinach
1 small yellow onion, quartered
4 garlic cloves, peeled
1 tbsp avocado oil
3 cups bone broth
½ cup cottage cheese
6 oz feta cheese (reserve some for topping)
Juice of ½ large lemon (plus zest for topping)
1 tsp dried oregano
½ tsp chili flakes (plus extra for garnish)
Salt and pepper, to taste
Optional: fresh dill and finely shredded Parmesan or Manchego for garnish
Directions:
Preheat oven to 400°F.
On a sheet pan, toss broccoli, onion, and garlic with avocado oil, oregano, chili flakes, salt, and pepper. Nestle the feta in one corner of the pan.
Roast vegetables and feta for 28—30 minutes, or until golden and slightly crisp at the edges.
Transfer roasted vegetables to a blender. Add bone broth, spinach, cottage cheese, and lemon juice. Blend until smooth and creamy. Add more broth as needed to reach your desired consistency.
Pour the blended soup into a pot and warm gently over low heat. Taste and adjust seasoning—salt, pepper, lemon juice, or chili flakes.
Ladle into bowls and garnish with fresh dill, extra chili flakes, lemon zest, and finely shredded Parmesan or Manchego.
